Mexico holds significant opportunities for Utah’s economic growth. Currently, $1.5 billion flows across the U.S. and Mexico border on a daily basis; Utah is currently exporting a mere $500 million per year to Mexico, ranking Utah at #37 in the United States in exports to Mexico. The purpose of this summit is to capitalize on these measures and the unique, economically motivating events that are taking place in Utah which highlight our commitment and capacity to make legitimate gains in improving our relationship with Mexico. These events include:
•The appointment of Eduardo Arnal as Mexican Consul General to Utah
•The U.S. – Mexico Chamber of Commerce (USMCOC) selection of Salt Lake City to host the new Intermountain Chapter, beating out NV, CO, WY, and ID
•The U.S. Hispanic Chamber of Commerce selection to host their annual conference in Salt Lake City during the fall of 2014
•The Global Spotlight on Mexico partnership between the University of Utah and Utah Valley University for the 2013-2014 academic year
•The University of Utah’s 2014 Siciliano Forum focus on U.S.-Mexico relations and immigration

Feb 27 Food Entrepreneurs Karen Allen FOOD Workshop Series – Navigating the Sea of Regulations
12:00 – 2:00 p.m.
The rules and regulations for food processing are numerous, and not always clear. Since the passing of the Food Safety Modernization Act in 2011, food producers have come under increased scrutiny.
This seminar will provide an overview of which regulatory agencies have jurisdiction over different types of foods, the relationship between State and Federal agencies in Utah, and which categories of food products require additional monitoring. Strategies for designing and implementing an effective recall plan (required for grocery store chains such as Whole Foods) will also be discussed. Food companies of all sizes are encouraged to attend, from established companies looking to expand their existing product lines to cottage operations considering whether to take the next step into commercial food production.”
